Directions :

Preheat the oven to 375. Add cauliflower rice, white rice, and half the taco seasoning together in a bowl and set aside. Cut the tortillas in half and set to the side. Brown the meat in a pan with no oil, drain and add half the taco seasoning. Set aside. In a lasagna pan, line the bottom with half the tortillas, then add half the meat, half the corn, half the rice mixture, and top with half the cheese. Repeat til all ingredients have been used. Throw it in the oven for 30 minutes covered on 375 then remove cover, increase heat to 425 and brown the top for 5-8 minutes. Serve hot with fat free sour cream!
